Went out to lunch today with a Vietnamese co-worker. He not only knew the name of the caramelized pork and onion dish that I'd feared was lost to history after my favorite Fields Corner restaurant closed, he knew which place here does it best. I also learned there are fish and shrimp versions of the dish. Also, this dish is always paired with a specific soup.
At Saigon Seafood, the pork version is called "Pork Cooked in Clay Pot" (Thit heo kho to). Highly recommended.
We're visiting another place in two weeks. I can hardly wait.
